Saffron Lassi- A dessert in which the normal turns into a delicacy

Delicious Saffron Lassi

We know Lassis, of course: the Indian yoghurt drink has become a popular trend drink in Germany. Especially in summer, the cooling yogurt mixed with fresh fruits such as mango, banana or papaya does really well.

Although it is certainly a quick and easy alternative to add yogurt with some water and fresh fruit to the blender, my Indian cooking teacher Rekha would put her hands over hear head hearing about such a Lassi recipe.

Rekhas Lassi is not just a lassi, but rather a dessert prepared with love, royal ingredients and some effort. The rich, yet refreshing dessert is a real highlight after a nice dinner with guests and is a taste experience of a special kind.

Preparation time: 3 hours

Ingredients for 4 Lassis:

1 kg Greek yoghurt or full fat yogurt

100 g powdered sugar

2-3 saffron threads

1 teaspoon warm milk

2 teaspoons ground cardamom

1/2 teaspoon rose water

For garnish:

some eatable silver leaf

2 teaspoons chopped almonds and pistachios

Preparation:

1. Hang the yogurt in a white linen cloth for about three hours until all the liquid is out of the yogurt

2. Put the saffron threads in the warm milk until they dissolve

3. Mix the hung yogurt, saffron, cardamom, rose water and sugar together and whisk well with a hand whisk. It is very important not to use an electrical device here, otherwise the Lassi becomes runny.

4.Serve it in small glasses or – more traditional- in small clay pods and garnish the Lassi with some silver leaf and the chopped almonds and pistachios.
