I really hope that vegetarian adaption of the Tripura Kosoi is somehow authentic. Normally vegetables in the North East States of India are boiled and serve as a side dish (similar to Germany ?). The North East States are also the home of the Ghost Pepper, one of the spiciest chillies in the world.
So people love to eat spicy. I guess normally the Tofu would be replaced with meet in Tripura. Anyway, I really liked this simple bean-tofu fry. It reminded me of a Chinese preparation, which can be true, since China is not too far away, although the hilly Tripura with its Tea plantations, toy trains and tribes, is bordered on three sides by Bangladesh.
